Instructions

- Boil Potatoes: Fill a large pot with water, add the kosher salt and baking soda, and bring to a boil. Add the potato chunks and cook until the edges start to soften, about 10-15 minutes.
- Drain and Roughen: Drain the potatoes well. To help them crisp up, gently shake or toss the potatoes in the colander to roughen up the edges.
