Description

Wrap Base

  • 1 tortilla
  • 2 tbsp hummus
  • 2 oz deli turkey

Veggie & Cheese Mix

  • 1 leaf lettuce (romaine recommended)
  • 3-4 slices cucumber
  • 3-4 cherry tomatoes
  • 5-6 strips red onion
  • 3-4 kalamata olives
  • 3-4 banana pepper rings
  • 2 tbsp feta cheese crumbles
  • 1.5 tbsp Greek vinaigrette


Instructions

  1. Prepare Lettuce: Chop the romaine lettuce leaf into thin shreds or use pre-packaged shredded lettuce to save time.
  2. Chop Vegetables: Quarter the cherry tomatoes; thinly slice the cucumber and then quarter those slices into small triangular pieces.
  3. Slice Onions and Olives: Thinly slice the red onion strips and slice 3-4 kalamata olives into smaller pieces.
  4. Prepare Banana Peppers: Chop 3-4 banana pepper rings into smaller pieces for easier wrapping and eating.
  5. Toss Veggies and Cheese: In a small bowl, combine all chopped veggies, olives, banana peppers, and 2 tbsp feta cheese crumbles. Drizzle with 1.5 tbsp Greek vinaigrette and toss gently to combine. Set aside.
  6. Assemble Wrap: Lay the tortilla flat and spread 2 tbsp hummus evenly over its surface.
  7. Add Turkey: Layer 2 oz of deli turkey evenly on top of the hummus, keeping it centered for easier rolling.
  8. Add Veggie Mixture: Scoop the prepared veggie and feta mixture over the turkey, again keeping it centered on the tortilla.
  9. Roll and Slice: Carefully roll the tortilla up tightly, then cut the wrap in half to serve.

  • For a quicker option, pre-shredded lettuce can be used.
  • Adjust the amount of banana peppers if you prefer more or less spice.
