Dry Ingredients
- 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
Mix-ins
- 1/2 cup (80g) sprinkles, plus more for topping
Instructions
- Mix Dry Ingredients: Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
- Cream Butter and Sugar: In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on medium-high speed until creamed, about 1 minute.
- Add Egg and Vanilla: Add the egg and vanilla extract and beat on high speed until combined, about 1 minute. Scrape down the sides and bottom of the bowl and beat again to fully combine.
- Combine Dry and Wet Ingredients: Add the dry ingredients to the wet ingredients and mix on low speed until just combined. Then beat in 1/2 cup sprinkles. The dough will be thick and sticky.
- Form Dough Balls: Scoop sections of dough about 2 tablespoons each and roll into balls. For extra sprinkle decoration, lightly dip the tops of the dough balls in additional sprinkles. Place the dough balls on a lined baking sheet or large plate.
- Chill Dough: Cover and refrigerate the cookie dough balls for at least 2 hours and up to 4 days to firm up.
- Preheat Oven: Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper or silicone mats.
- Arrange Cookies: Place chilled dough balls 3 inches apart on the prepared baking sheets.
- Bake Cookies: Bake for 12-13 minutes until the edges are lightly browned but the centers remain soft.
- Cool Cookies: Remove from oven and let cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
- Store and Serve: Store cookies covered at room temperature for up to 1 week and enjoy!
Notes
- Ensure the butter is softened to room temperature for easier creaming and better dough texture.
- Chilling the dough is essential for the cookies to hold their shape and develop flavors.
- You can customize sprinkles with holiday colors for festive variation.
- If you don’t have a mixer, you can cream butter and sugar by hand using a sturdy spoon and some elbow grease.
- Cookies are best enjoyed within a week for freshness and softness.
