Wet Ingredients

  • 1/2 cup International Delight Caramel Macchiato Iced Coffee (or milk)
  • 1/4 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter (melted and slightly cooled)

Cinnamon Sugar Coating

  • 1/4 cup unsalted butter (melted and slightly cooled)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon


Instructions

  1. Preheat and prepare baking pan. Preheat your oven to 350°F (175°C). Lightly grease a mini muffin or donut hole pan to prevent sticking.
  2. Mix dry ingredients. In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt until well combined.
  3. Combine wet ingredients. In a separate large bowl, whisk the iced coffee or milk, plain Greek yogurt, granulated sugar, egg, vanilla extract, and melted butter until smooth and creamy.
  4. Incorporate dry into wet mixture. Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Do not overmix, as it can make the donut holes dense.
  5. Fill the pan and bake. Spoon the batter into the prepared pan, filling each cavity about three-quarters full. Bake in the preheated oven for 10 minutes or until the tops spring back to the touch and a toothpick inserted comes out clean.
  6. Prepare cinnamon sugar coating. While the donut holes bake, combine the 1/2 cup granulated sugar and 2 teaspoons of ground cinnamon in a shallow bowl or plate.
